If prophets were restricted to teaching only doctrines for which we have record of Jesus proclaiming, then Peter and Paul both would be greatly remiss.

But, if we can agree that the Bible does not contain all of the words that Jesus spoke, and did, then we should be able to understand with some certainty that we do not know all of the doctrines which Jesus did teach His apostles,

John said that all of the acts of Jesus were not recorded, and maybe even could not be recorded, at least at the time. “John 21:25 And there are also many other things which Jesus did, the which, if they should be written every one, I suppose that even the world itself could not contain the books that should be written. Amen.”

But even with that, since it is Jesus himself that is the revelator to His prophets, any doctrine properly will come from Jesus.

Now, as to Mormons being Christians, we are not, if we go by the current mainstream definition of Christian. Just for one example, LDS believe that Jesus has a body.
